Mmm... Pasta! One of my all time favorite dishes. And this one has cheese!
I'll start of saying, I'm not a good cook. I'm a better baker. One of my new favorite meals to make is the Baked Vegan Feta Cheese Pasta. Its so quick and easy to make, and takes little time to prepare. So for me this recipe hit the mark!
When I first saw it, it was from a Instagram post by @maxlamanna. I know it's probably nothing new and mind blowing, all I can say is, you must try this!
Here's what you will need:
Serves 2-4 Bake for 20-25mins Pre-heat oven to 200C/400F
Ingredients:
Pasta of your choice
1 block of vegan feta
300g baby plum tomatoes
2 tsp olive oil
Pinch of salt, black pepper and dried oregano
Fresh basil for garnish (optional)
Instructions:
In a baking dish, add the feta and tomatoes. Drizzle the olive oil and add seasoning.
Place in oven.
While that's baking, make pasta of your choice (Rotelle pasta is my favorite).
Once done, drain water and set aside.
When done baking, remove feta and tomatoes from the oven and add the cooked pasta.
Stir and serve!
