Want a nice warm cookie to snuggle up with in the cold weather while watching one of your favorite shows? Then try this coffee cake cookie recipe!
I got this recipe from "the palatable life" on instagram, so all credits for the recipe go to them.
NOTE: These cookie taste best with coffee or tea since they are a little bit dry but they have an amazing flavor, also don't forget the glaze like I did, it should give the cookies a little moisture.
Ingredients
Cookie Dough
1/2 cup softened butter
1/2 cup vegetable oil
1 cup brown sugar
1 egg
1 tsp vanilla
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 1/2 cup flour
Streusel
1/4 cup softened butter
1/4 cup brown sugar
1/3-1/2 cup flour (I used closer to 1/2)
1/2 tsp cinnamon
pinch of salt
Icing
1/2 cup powdered sugar
1 tbsp milk
splash of vanilla
Steps
Preheat the oven to 350 F. To make the dough, combine the butter, oil, and brown sugar. Mix for a couple minutes until it is smooth. The mixture should be lighter in color and fluffy. Add the egg and vanilla and mix again.
To make the streusel, combine all the ingredients in a bowl and mix with a spoon or your hand. Start with 1/3 cup of flour. The mixture should stick together, but should also crumble when you run it
Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet.
Bake the cookies at 350 for 10-12 minutes. While they are baking, make the icing.
Combine the powdered sugar, milk, and vanilla in a small bowl and whisk until smooth.
This was a fun, and pretty quick recipe and perfect for the late fall weather!
