Ingredients

2 1/2 tsp dry active yeast
1 cup warm water
1/4 cup honey
4 cups flour
1 egg
5 tbsp melted butter
2 tsp salt
3 tbsp sugar
Optional: milk & beated egg for egg wash
Cinnamon Butter
1/2 cup (one stick) room temperature butter
3 tbsp powdered sugar
1 1/2 tsp cinnamon (I would recommend less since mine was a little strong)
3 tbsp honey
1/4 tsp vanilla extract
Pinch of salt
Steps

Mix yeast, warm water, and honey into a medium to large bowl and let sit for ten minutes. (Make sure your honey is room temperature, my honey was crystallized and I had to heat it in the microwave, I didn't wait long enough for it to cool so I think it must have killed some of the yeast and as a result, my rolls were very dense and not fluffy.)
Add flour, egg, melted butter, salt, and sugar to the yeast mix and knead your dough for ten minutes.
Add the dough to an oiled bowl, cover, and let rest for an hour
Add your dough to a flowered surface and roll it out until it's about a quarter of an inch thick.
Cut the dough into strips and fold them over themselves once and cut at the edge to make small folded squares
Cover the squares and let rest for 15 minutes
Place the rolls onto a baking sheet and add your egg wash then place in the oven at 350 for 18-20 minutes.
Once out of the oven brush some extra melted butter over the top
Cinnamon Butter
Add butter, powdered sugar, cinnamon, honey, vanilla extract, and salt into a bowl and beat on high speed for about five minutes or until light and fluffy.
