National Peanut Butter Lover's Day was on March 1st, 2021, and what better way than to celebrate with peanut butter spider cookies!
I know what you're thinking... spider cookies in springtime? Absolutely. I will make any excuse to add spookiness to my baking. Plus, these are fairly easy to do and are fun to decorate!
Peanut Butter Spider Cookies
1 egg
candy eyes
1/2 tsp salt
2 tbsp milk
1 tsp vanilla
1/2 cup sugar
1 3/4 cup flour
1 tsp baking soda
1/2 cup shortening
1/2 cup peanut butter
1/2 cup brown sugar
1/2 cup chocolate chips
1/4 cup sugar (for rolling)
miniature Reese's cup (frozen)
First things first: Preheat your oven to 375 degrees and place unwrapped Reese's in the freezer to chill!
Beat together shortening, peanut butter, egg, sugar, brown sugar, vanilla, and milk in a large bowl
In a separate bowl, whisk together flour, baking soda, and salt
Gradually add the dry mixture to the wet mixture and beat until blended
Place the mixture in the fridge to chill for 25 minutes
Remove the bowl from the fridge and roll into 1" balls
Toss the 1" balls in the 1/4 cup of sugar before placing them a couple of inches apart on a baking sheet
Bake cookies for 10-12 minutes or until golden
Remove from oven and immediately press an upside down frozen peanut butter cup on top of each cookie then move to a wire rack to cool
While cooling, place two candy eyes on each cookie before moving to the fridge to chill completely
While chilling, put chocolate chips in the corner of a zipped sandwich bag
Microwave for 20 seconds, knead, and repeat until chocolate has melted
Remove cookies from the fridge, clip the end of the bag, and pipe on eight legs using the chocolate
Place cookies back into the fridge to allow the legs to set
Normally I store these little friends in the fridge because the chocolate tends to melt in room temperature settings. Just pop them in a sealed container and eat them at your own leisure! Or, if you're feeling kind, share with friends.
